  • 6 slices turkey bacon, chopped
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 pound gnocchi
  • 2 cups sharp cheddar cheese, shredded
  • 2 cups chopped fresh spinach
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter

  1. In a large pot over medium heat, cook turkey bacon until crispy. Remove and set aside.
  2. In the same pot with the bacon grease, sauté onions until translucent (about 5 minutes), then add garlic and cook for another minute.
  3. Stir in flour to form a roux; gradually whisk in chicken broth until smooth.
  4. Bring to a simmer; then stir in cream, thyme, and smoked paprika.
  5. Add gnocchi; cook until they float (3-5 minutes).
  6. Reduce heat and mix in cheddar cheese until melted.
  7. Season with salt and pepper. Add sautéed spinach and reserved bacon before serving.
