  • 2 pints cherry tomatoes
  • 1/2 cup extra virgin olive oil
  • 8 oz block feta cheese
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 3 cloves garlic, minced
  • 1/4 cup chopped basil leaves
  • 1.5 pounds packaged gnocchi

Instructions

  1. Preheat your oven to 425°F.
  2. In a large baking dish, combine cherry tomatoes with olive oil, salt, and pepper. Toss to coat.
  3. Place the block of feta in the center of the dish.
  4. Bake for 30-35 minutes until bubbly and golden.
  5. While baking, boil salted water and cook gnocchi until they float (3-5 minutes).
  6. Add minced garlic and chopped basil to the baking dish and stir well.
  7. Toss cooked gnocchi into the mixture until combined.
  8. Serve immediately, garnished with more fresh basil if desired.
