  • 3 teaspoons kosher salt
  • ½ teaspoon black pepper
  • 1 medium yellow onion
  • 1 large carrot
  • 4 garlic cloves
  • 1 tablespoon tomato paste
  • 2 tablespoons all-purpose flour
  • 3 cups apple vinegar
  • 8 ounces cremini mushrooms
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Season beef cubes with salt and pepper.
  3. In a Dutch oven, cook chopped bacon until crispy; remove and set aside.
  4. Brown the beef cubes in batches until seared on all sides; remove from pot.
  5. Sauté onions and carrots until softened; add garlic, tomato paste, bay leaf, and thyme.
  6. Stir in flour, then deglaze with apple vinegar, scraping up browned bits from the pot.
  7. Return beef and bacon to the pot; bring to a simmer.
  8. Cover and roast in the oven for about 2½ hours until tender.
  9. Sauté mushrooms and pearl onions separately; stir into stew before serving.
