  • 1 cup packed brown sugar
  • 1/2 cup white sugar
  • 2 medium eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups chocolate chips (milk or semi-sweet)
  • 14 ounces unwrapped caramels
  • 5 ounces canned evaporated milk
  • 1/2 cup peanut butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and white sugar until fluffy. Add eggs one at a time along with vanilla extract.
  3. In another bowl, whisk together flour, baking soda, and salt. Gradually combine with the wet mixture until just mixed.
  4. Fold in chocolate chips.
  5. Spread half of the dough into a greased baking dish and bake for about 10 minutes.
  6. Meanwhile, melt caramels with evaporated milk in a saucepan over low heat until smooth.
  7. Remove cookie base from oven and pour melted caramel over it; dollop remaining cookie dough on top.
  8. Return to oven and bake for another 10-12 minutes until golden brown.
  9. Let cool completely before cutting into squares.
