  • 2 cups broccoli florets
  • 1 cup diced carrots
  • 1 cup diced bell peppers
  • 1 medium onion, diced
  • 23 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 cup milk (or cream)
  • 2 cups shredded cheese (cheddar and mozzarella blend)
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons butter or olive oil
  • 2 tablespoons all-purpose flour (or cornstarch)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  1. Rinse quinoa under cold water; cook according to package instructions using vegetable broth.
  2. In a skillet over medium heat, melt butter or olive oil; sauté onions and garlic until soft.
  3. Add carrots and bell peppers; cook until softened. Stir in broccoli until bright green.
  4. In a bowl, combine cooked quinoa with sautéed vegetables, milk, shredded cheese (saving some for topping), flour, herbs, salt, pepper, and red pepper flakes.
  5. Transfer mixture to a greased baking dish; top with remaining cheese and Parmesan.
  6. Preheat oven to 350°F (175°C) and bake for about 25 minutes until golden brown.
