  • 45 pound turkey breast (bone-in, skin-on)
  • 1/2 cup unsalted butter (softened)
  • Zest of 1 lemon
  • Zest of 1 orange
  • 1 tablespoon fresh rosemary (finely chopped)
  • 1 tablespoon fresh thyme (finely chopped)
  • 1 tablespoon fresh sage (finely chopped)
  • 3 cloves garlic (minced)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 onion (quartered)
  • 1 lemon (sliced)
  • 1 orange (sliced)
  • 1/2 cup chicken broth

Instructions

  1. Mix softened butter with lemon zest, orange zest, rosemary, thyme, sage, garlic, salt, and pepper in a bowl.
  2. Loosen the skin from the turkey breast and rub half the herb butter underneath; spread the rest over the skin.
  3. Place onion quarters and citrus slices in a roasting pan; pour chicken broth in.
  4. Preheat oven to 350°F (175°C) and roast turkey for about 1 hour 40 minutes until it reaches an internal temperature of 165°F (74°C), basting occasionally.
  5. Let rest for 15-20 minutes before carving.
