  • 5 eggs
  • 1/2 cup powdered sugar
  • 8 oz mascarpone cheese
  • 1/2 cup coconut cream
  • 1 cup heavy cream
  • 14 oz sweetened condensed milk
  • 13.5 oz coconut milk
  • 12 oz evaporated milk
  • 1/2 cup alcohol-free vanilla extract
  • 1 tsp cinnamon
  • 2 cups coconut flakes
  • 24 ladyfingers

Instructions

  1. In a bowl, whisk egg yolks and powdered sugar until pale yellow.
  2. Fold in mascarpone, coconut cream, and half the coconut milk.
  3. Whip remaining heavy cream with powdered sugar until stiff peaks form; fold into the mascarpone mixture.
  4. In another bowl, mix sweetened condensed milk, evaporated milk, remaining coconut milk, vanilla extract, and cinnamon.
  5. Dip ladyfingers briefly in the soaking mix and layer them in your serving dish.
  6. Spread half of the cream mixture over the ladyfingers; add more soaked ladyfingers followed by the rest of the cream.
  7. Top with cinnamon and coconut flakes before refrigerating for at least 12 hours.
