  • 2 cups fresh baby spinach, chopped
  • 1 1/2 cups cottage cheese
  • 4 large eggs
  • 1 cup shredded cheddar cheese (or half cheddar, half mozzarella)
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat; sauté diced onion and bell pepper until soft.
  3. Add chopped spinach and cook until wilted; season with garlic powder, salt, and pepper.
  4. In a bowl, whisk together eggs, milk, cottage cheese, Italian seasoning, salt, and pepper until smooth.
  5. Fold in the sautéed vegetables and shredded cheese until well combined.
  6. Grease a 9-inch pie dish; pour the mixture evenly into the dish.
  7. Bake for 40–45 minutes or until golden on top and set in the center.
  8. Cool for 5–10 minutes before slicing; serve warm or at room temperature.
