  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 4 cups beef broth
  • 1 (14.5-ounce) can diced tomatoes (with juice)
  • 1 (15-ounce) can whole kernel corn, drained
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup heavy cream or half-and-half
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • Salt and black pepper, to taste
  • 1 cup shredded cheddar cheese
  • Sliced green onions
  • Extra shredded cheese
  • Crushed tortilla chips

Instructions

  1. In a large pot over medium heat, brown the ground beef until fully cooked; drain excess fat.
  2. Add diced onion and sauté until translucent (about 5 minutes), then stir in minced garlic for another minute.
  3. Pour in beef broth along with diced tomatoes (with juice), corn, black beans, and potatoes; mix well.
  4. Season with smoked paprika, chili powder, cumin, salt, and pepper. Let simmer uncovered for about 20 minutes until potatoes are tender.
  5. Reduce heat to low and stir in heavy cream and shredded cheddar cheese until melted and creamy.
  6. Serve hot topped with sliced green onions, extra cheese, and crushed tortilla chips.
