  • 2 lbs chicken, cut into thin strips
  • ½ cup chicken stock (or vegetable broth)
  • 1 cup heavy cream (or coconut cream)
  • ½ cup parmesan cheese, shredded
  • ½ cup pepperoncini peppers, drained and sliced
  • 2 tbsp butter
  • 1 tsp sea salt
  • 1 tsp ground pepper
  • 1 white onion, diced
  • 2 tbsp garlic, diced
  • ½ cup roasted red pepper, drained and sliced
  • 1 tbsp Italian seasoning

Instructions

  1. In a large skillet, melt butter over medium heat. Add the chicken strips, season with salt and pepper, and cook until golden brown.
  2. Remove chicken from the skillet; add diced onions and garlic to the same skillet and sauté until translucent.
  3. Pour in the chicken stock (or vegetable broth) and add sliced roasted red peppers. Bring to a gentle simmer.
  4. Reduce heat to low; stir in heavy cream (or coconut cream), parmesan cheese, and Italian seasoning until smooth.
