  • 1 medium spaghetti squash
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 4 cups fresh spinach
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Halve the spaghetti squash lengthwise and scoop out the seeds. Drizzle with olive oil and season with salt and pepper.
  3. Place the squash halves cut-side down on a baking sheet and roast for 30-35 minutes until tender.
  4. In a skillet over medium heat, sauté diced onions in olive oil until translucent. Add minced garlic and sliced mushrooms; cook until browned.
  5. Stir in fresh spinach until wilted, then remove from heat.
  6. In a bowl, combine softened cream cheese, grated Parmesan cheese, nutmeg, salt, pepper, and the mushroom-spinach mixture.
  7. Scrape the roasted squash into strands using a fork and fold it into the filling.
  8. Stuff the mixture back into each half of the squash and top with shredded mozzarella cheese.
  9. Bake for an additional 10-15 minutes or until the cheese is bubbly.
