  • 5 cups cubed sweet potatoes
  • 3 garlic cloves, minced
  • 1 pound turkey sausage
  • 10 eggs
  • 1/2 cup milk (plant-based milk can be substituted)
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup grated mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat avocado oil over medium heat. Sauté the onion and green bell pepper until soft.
  3. Add turkey sausage to the skillet; cook until browned and fully cooked.
  4. Stir in sweet potatoes and minced garlic; cook until sweet potatoes are tender—about 10 minutes.
  5. In a bowl, whisk together eggs, milk, thyme, salt, and pepper until well combined.
  6. Pour egg mixture over the sautéed ingredients in the skillet; fold gently to combine.
  7. Sprinkle mozzarella cheese on top before transferring everything into a greased baking dish.
