  • 8 cloves garlic
  • 1 cup shredded provolone cheese
  • 6 ounces frozen chopped spinach (thawed and squeezed dry)
  • 1/2 cup chopped sun-dried tomatoes
  • 1/4 cup grated parmesan cheese
  • Fresh herbs like basil or thyme
  • 1 1/4 cups whole milk or heavy cream
  • 1/2 cup chopped mozzarella or gouda
  • 3 tablespoons Italian seasoning
  • 1 tablespoon dijon mustard
  • Kosher salt and black pepper
  • 6 tablespoons salted butter
  • 1/2 chopped fresh herbs (basil, thyme, oregano/sage)

Instructions

  1. Preheat your oven to 425°F.
  2. Prepare the filling by mixing milk, spinach, sun-dried tomatoes, mozzarella, salt, and pepper in a bowl.
  3. Halve the spaghetti squash, season with salt and pepper, fill with parmesan and the creamy mixture, then cover and bake for 15 minutes.
  4. Combine ground chicken with garlic, Italian seasoning, dijon mustard, salt, pepper, and remaining parmesan; form into meatballs.
  5. Remove foil from squash, add meatballs to the pan, and bake for an additional 15 minutes.
  6. Top with provolone cheese and bake until bubbly (10-15 minutes).
