  • 1 large bulb of Garlic
  • 1.3kg / 2.8lb Baking Potatoes
  • 5 tbsp / 75g Butter (2 tbsp melted)
  • 2 tbsp Heavy Cream
  • 60g / 3/4 cup freshly grated Parmesan
  • 4 large Egg Yolks
  • Olive Oil
  • Salt & Pepper

Instructions

  1. Preheat oven to 180C/356F. Slice the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast for about 50-60 minutes.
  2. Peel and chop baking potatoes into chunks, boil in salted water until fork-tender.
  3. Drain potatoes and mash with butter, cream, roasted garlic, and Parmesan. Season with salt and pepper.
  4. Pipe the mixture onto a lined baking tray into swirly dome shapes.
  5. Drizzle with melted butter and bake at 200C/400F for 15-20 minutes until golden brown.
  6. Garnish with fresh parsley and extra Parmesan before serving.
