  • 2 tablespoons cornstarch
  • 1/4 cup molasses
  • 2/3 cup sour cream
  • 2 teaspoons vanilla extract
  • 3 large eggs, whisked
  • 1/3 cup unsalted butter, cut into cubes
  • 1/2 cup brown sugar, packed
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup heavy cream
  • 2 teaspoons powdered sugar

Instructions

  1. Preheat your oven to 325°F (163°C) and lightly grease a 9-inch springform pan.
  2. In a bowl, mix gingersnap crumbs with brown sugar and melted butter. Press the mixture into the bottom of the prepared pan.
  3. Beat softened cream cheese until smooth, then add sugars and spices. Mix in molasses, sour cream, vanilla extract, and eggs until well combined.
  4. Pour the filling over the crust and bake in a water bath for about 60 minutes.
  5. Cool in the oven with the door slightly open for one hour before refrigerating for at least four hours.
  6. Top with a delicious sauce made from melted butter, brown sugar, and cream before serving.
