  • 1 cup granulated sugar
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups fresh peaches, peeled and diced
  • 2 tablespoons cornstarch
  • ¼ cup brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, and salt. Cut in the cold butter until it resembles coarse crumbs. Mix in eggs and vanilla until just combined.
  3. Press about two-thirds of the mixture into the bottom of the prepared pan.
  4. In another bowl, combine diced peaches with cornstarch and brown sugar; spread over the crust.
  5. Crumble the remaining dough over the peach filling and bake for approximately 35 minutes or until golden brown.
  6. Allow to cool completely before cutting into squares.
