  • 2 tablespoons unsalted butter
  • 1 tablespoon minced garlic
  • 11/2 cups diced yellow onion
  • 1 cup diced carrot
  • 1/4 cup flour
  • 3 cups diced baby gold potatoes
  • 2 cups chicken broth
  • 3 cups whole milk
  • 1/2 cup heavy cream

Instructions

  1. If using fresh corn, cut kernels off the cobs to yield about 4-1/2 cups; reserve the cobs for added flavor.
  2. In a large pot over medium heat, melt butter. Add onion, carrot, and garlic, seasoning with salt and pepper. Sauté until softened (5–7 minutes).
  3. Sprinkle flour over the veggies while stirring; add diced potatoes and stir in seasonings.
  4. Gradually pour in chicken broth while scraping the pot's bottom for flavor. Stir in milk and reserved corn cobs; add a bay leaf.
  5. Bring to a simmer over medium-high heat, then lower to medium-low and cover for 20–25 minutes until thickened.
  6. Remove bay leaf and corn cobs. Stir in fresh corn kernels and heavy cream; adjust seasoning to taste.
