  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons jerk seasoning
  • 1 tablespoon olive oil (plus more for cooking)
  • 1 cup jasmine rice
  • 1 ½ cups water
  • 1 cup fresh pineapple, diced
  • ½ cup fresh basil leaves, chopped
  • 2 tablespoons lime juice
  • 1 tablespoon soy sauce or tamari

Instructions

  1. Marinate the shrimp with jerk seasoning, olive oil, and lime juice for at least 10 minutes.
  2. Rinse jasmine rice under cold water until clear. Combine rice, water, olive oil, and salt in a pot. Bring to boil, then reduce heat and cover; simmer until fluffy (about 15 minutes).
  3. In a skillet over medium heat, cook marinated shrimp until pink and opaque (3-4 minutes per side).
  4. Add diced pineapple, lime juice, and soy sauce to the skillet; stir gently. Fold in chopped basil right before serving.
  5. Fluff cooked rice and serve topped with the shrimp mixture.
