  • 8 ounces gluten-free pasta (corn/quinoa or chickpea/lentil)
  • 3 cups boiling water
  • 1 can vegetable broth
  • 1 can fire-roasted tomatoes
  • 1 can artichoke hearts (drained)
  • 1 cup black olives
  • 1/2 purple onion (sliced)
  • 2 tablespoons fresh thyme (or 1 teaspoon dried thyme)
  • 1 teaspoon cumin
  • sea salt and black pepper (to taste)

Instructions

  1. Boil water in a large pot.
  2. Add gluten-free pasta, vegetable broth, onions, fire-roasted tomatoes, artichoke hearts, olives, thyme, and cumin.
  3. Bring to a boil while stirring occasionally.
  4. Maintain a gentle boil and stir regularly until pasta is cooked al dente.
  5. Season with sea salt and black pepper to taste.
  6. Serve immediately garnished with fresh basil or plant-based parmesan if desired.
