  • 2 cups cooked quinoa or couscous
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 cup red onion, thinly sliced
  • 1 cup chickpeas, drained and rinsed
  • ½ cup feta cheese, crumbled (optional)
  • ¼ cup Kalamata olives, pitted and sliced
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Marinate the flank steak by mixing olive oil, lemon juice, paprika, salt, and pepper in a bowl. Let it sit for 15–30 minutes.
  2. Cook the quinoa or couscous according to package instructions and set aside.
  3. Preheat your grill or stovetop pan over medium-high heat and grill the marinated steak for 6–8 minutes on each side for medium-rare. Adjust cooking time to your preference.
  4. Allow the grilled steak to rest for 5 minutes before slicing.
  5. In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, and chickpeas; season with olive oil, salt, and pepper.
  6. Assemble the bowls by layering cooked quinoa/couscous with sliced steak and vegetable mixture on top. Add feta cheese and olives if desired.
