  • 1 lb boneless skinless chicken breast
  • 1/2 cup seasoned flour
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 cups mushrooms, halved
  • 1 clove garlic, minced
  • 3 sprigs thyme
  • 1 1/2 cups dry white grape juice
  • 2 tbs butter
  • 2 tbs olive oil
  • 1/2 cup heavy cream
  • 1/3 cup shredded asiago cheese
  • 1/2 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Pound the chicken breast to about 1/4-inch thickness and cut into serving-sized pieces.
  2. Heat butter and olive oil in a skillet over medium heat. Dredge chicken in seasoned flour and sauté until golden brown, about 5 minutes per side.
  3. Remove chicken from the pan and add mushrooms and garlic; sauté until browned.
  4. Pour in grape juice to deglaze the pan, scraping up browned bits. Add thyme.
  5. Return chicken to the pan; bring to a gentle boil, cover, and simmer for 15-20 minutes.
  6. Remove chicken again, stir in cream and cheese until melted into a sauce.
  7. Combine chicken back into the sauce briefly before serving.
