  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped topping, thawed
  • 1 cup packed brown sugar
  • ½ cup light corn syrup
  • ¼ cup unsalted butter
  • 2 large eggs, lightly beaten
  • 1 ½ cups chopped pecans

Instructions

  1. Prepare the crust by mixing graham cracker crumbs, sugar, and melted butter. Press firmly into a greased 9×13-inch dish and chill for about 10–15 minutes.
  2. In a bowl, beat softened cream cheese until smooth. Gradually add powdered sugar and vanilla extract, then fold in whipped topping. Spread over the chilled crust.
  3. For the pecan layer, combine brown sugar, corn syrup, and butter in a saucepan over medium heat; stir until bubbling. Remove from heat and whisk in beaten eggs gradually. Mix in chopped pecans and a pinch of salt; let cool slightly before pouring over the cream cheese layer.
  4. Chill covered for at least 4 hours or overnight to set.
  5. Slice with a warm knife for clean cuts and serve with whipped cream or vanilla ice cream if desired.
