  • 1/4 cup pumpkin puree
  • 1 tsp. vanilla extract
  • 1/4 packed cup almond flour
  • 2 tsp. pumpkin pie spice
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 cup vegan mini vegan marshmallows
  • 1/2 cup semi-sweet chocolate chips or chunks

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix almond butter, brown sugar, pumpkin puree, vanilla extract, and egg until well combined.
  3. In another bowl, whisk together almond flour, pumpkin pie spice, baking soda, and salt.
  4. Combine the dry ingredients with the wet mixture until just mixed; gently fold in chocolate chips.
  5. Scoop dough onto the baking sheet and place 2-3 mini marshmallows on top of each scoop.
  6. Bake for 10-12 minutes until golden brown; allow cooling before transferring to a wire rack.
