  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 ½ tsp ground ginger
  • 1 ½ tsp ground cinnamon
  • ¼ tsp ground allspice
  • ¼ tsp ground cloves
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup light brown sugar
  • 1 large egg, room temperature
  • 1 cup molasses, unsulphured
  • 1 tsp vanilla extract
  • 1 cup hot water

Instructions

  1. Preheat oven to 350ºF.
  2. In a bowl, mix flour, baking soda, baking powder, ginger, cinnamon, allspice, cloves, and salt.
  3. In another bowl, cream softened butter and brown sugar until light; add egg, molasses, and vanilla and mix until smooth.
  4. Gradually combine dry ingredients with wet mixture; then stir in hot water until just combined.
  5. Pour batter into a prepared pan and bake for 25–30 minutes or until a toothpick comes out clean.
  6. Cool completely and serve with whipped coconut cream or fresh fruit.
