  • 89 medium starchy potatoes (about 1.2kg), thinly sliced
  • 1 head garlic
  • 1 cup heavy cream
  • 1/4 cup whole milk
  • 1 tablespoon unsalted butter
  • 1 tsp fresh thyme leaves
  • 1/4 tsp nutmeg
  • 1/2 cup grated parmesan cheese, divided
  • 2 cups shredded Gruyère or mozzarella cheese
  • Salt and pepper to taste
  • Fresh chives for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Roast the garlic by wrapping it in foil with olive oil and salt; bake for about 30 minutes.
  3. Grease a baking dish (9×13 inches).
  4. Thinly slice the potatoes using a mandoline for uniformity.
  5. Layer the potato slices upright in the greased dish.
  6. In a saucepan, combine heavy cream, milk, butter, half of the parmesan cheese, thyme, nutmeg, salt, and pepper; heat until melted.
  7. Squeeze roasted garlic into a paste and mix into the cream mixture.
  8. Pour the cream mixture over the layered potatoes evenly.
  9. Cover with foil and bake for about 40 minutes.
  10. Remove foil, sprinkle remaining cheeses on top, then bake uncovered for another 30 minutes until bubbly and golden.
  11. Let cool for a few minutes before garnishing with fresh chives.
