  • 3/4 cup shredded mozzarella cheese
  • 1/3 cup chopped sun-dried tomatoes (drained)
  • 1/4 cup chopped fresh basil

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8×4-inch loaf pan by greasing it and lining it with parchment paper.
  2. In a large bowl, whisk together eggs, milk, olive oil, and yogurt until smooth.
  3. In another bowl, mix flour, baking powder, salt, and garlic powder.
  4. Gradually combine the dry ingredients with the wet mixture until just mixed; avoid overmixing.
  5. Gently fold in mozzarella cheese, sun-dried tomatoes, and basil until evenly distributed.
  6. Pour the batter into the prepared loaf pan and smooth out the top.
  7. Bake for 40–45 minutes or until golden brown and a toothpick inserted comes out clean.
  8. Cool in the pan for about 10 minutes before transferring to a wire rack to slice.
