If you’re craving a cozy meal that warms both the heart and the belly, this Sourdough Pesto Grilled Cheese is the perfect dish for you. With its crispy, buttery sourdough paired with gooey mozzarella and vibrant basil pesto, this recipe brings smiles to the table on busy weeknights or relaxed family gatherings. The best part? It’s incredibly simple to make, using just a few wholesome ingredients. Once you take that first bite of melty goodness, you’ll understand why it has become a cherished favorite in my kitchen!

Ingredients

Scale
  • 8 thick slices of sourdough bread
  • 3 balls fresh mozzarella (each 125g), sliced thin and dried
  • 8 sun-dried tomatoes, dried and chopped
  • 4 generous tablespoons pesto
  • Butter, as required

Instructions

  1. Gather your ingredients and slice the mozzarella thinly for even melting.
  2. Assemble the sandwiches by buttering one side of each slice of sourdough. On the unbuttered side, layer mozzarella, sun-dried tomatoes, and pesto. Top with another slice of bread (buttered side out).
  3. Heat a skillet over medium heat and grill the sandwich until golden brown—about 3-4 minutes per side. Press gently with a spatula to enhance crispiness.
  4. Remove from heat, let cool briefly, then slice in half and serve.
